Operation Mountain Harvest

Operation Mountain Harvest is United Carolinas Cavalry’s community garden initiative designed to build long-term food resilience in Western North Carolina.
Local food production is essential in our mountain communities. Operation Mountain Harvest helps establish and sustain accessible community gardens that provide fresh, healthy food while fostering connection and self-reliance.
We partner with local leaders, volunteers, and churches to:
- Launch and support community garden spaces
- Provide tools, soil, seeds, and infrastructure
- Encourage intergenerational learning and stewardship
- Promote sustainable growing practices
This initiative is about more than planting vegetables. It’s about restoring independence, strengthening local networks and ensuring communities are better prepared for whatever comes next.

Operation Full Plates
Nourishing Families. Strengthening Communities.
Operation Full Plates is United Carolinas Cavalry’s child-focused nutrition initiative serving elementary school students in Title I schools across North Carolina.
For many children, school meals are their most reliable source of daily nutrition. When weekends, school breaks or household hardships interrupt access to food, learning suffers. Hunger creates barriers to concentration, confidence and long-term success.
Operation Full Plates works directly with Title I schools to identify needs and provide supplemental food support for students facing food insecurity. Through strategic partnerships, donor support and coordinated distribution efforts, we help ensure children have the nourishment they need beyond the classroom.
By supporting students in Title I schools, we are not only meeting immediate needs — we are investing in educational outcomes, family stability and the long-term strength of our communities.
When children are fed, they are free to learn, grow and thrive.

Operation Disaster Prep
Mobilizing and delivering aid swiftly to remote areas
Prepared Before the Storm. United Carolinas Cavalry does not wait for disaster to strike.
Our Disaster Preparedness & Pre-Staging Initiative focuses on building, staging, and strategically positioning relief pallets before hurricane season begins. These pallets contain essential supplies — including heaters, fuel-related resources, shelf-stable food, hygiene kits, and emergency essentials — ready for rapid deployment.
Because of our experience leading the largest civilian aircraft disaster relief effort in U.S. history following Hurricane Helene, we understand the critical importance of speed. The first 72 hours after a disaster are vital.
By pre-staging supplies:
- We reduce response time
- We lower logistical costs
- We eliminate delays caused by supply shortages
- We ensure immediate support reaches impacted communities
Preparedness saves lives, reduces suffering, and accelerates recovery.
